Eggs with Caviar

This is a very simple entree taken from a favourite Russian recipe book of mine – Russian, German and Polish Food and Cooking by Lesley Chamberlain.  It is quick and easy to make and looks impressive!

Hints & Tips

  • You can adjust the quantities to suit the number of guests – this serves 8!
  • GF, SF, Veg.

Ingredients

  • 12 Eggs, Hard -Boiled, Halved Lengthways+
  • 8 Spring Onions, Finely Sliced
  • 4 tablespoons Mayonnaise
  • 1/2 teaspoon Dijon Mustard
  • Salt
  • Freshly Ground Black pepper
  • 4 tablespoons Caviar or Black Lumpfish Roe

Instructions

  1. Remove the yolks from the halved eggs.
  2. Mash the egg yolks into a smooth paste in a bowl with the spring onion, mayonnaise and mustard.
  3. Mix well and season with salt and pepper.
  4. Fill the egg whites with the yolk mixture and arrange them on a serving dish.
  5. Spoon a little caviar or roe on top of each.
  6. Serve immediately.
