This is a very simple entree taken from a favourite Russian recipe book of mine – Russian, German and Polish Food and Cooking by Lesley Chamberlain. It is quick and easy to make and looks impressive!

- You can adjust the quantities to suit the number of guests – this serves 8!

Ingredients
- 12 Eggs, Hard -Boiled, Halved Lengthways+
- 8 Spring Onions, Finely Sliced
- 4 tablespoons Mayonnaise
- 1/2 teaspoon Dijon Mustard
- Salt
- Freshly Ground Black pepper
- 4 tablespoons Caviar or Black Lumpfish Roe
Instructions
- Remove the yolks from the halved eggs.
- Mash the egg yolks into a smooth paste in a bowl with the spring onion, mayonnaise and mustard.
- Mix well and season with salt and pepper.
- Fill the egg whites with the yolk mixture and arrange them on a serving dish.
- Spoon a little caviar or roe on top of each.
- Serve immediately.
