I absolutely love mangoes! I love them as a fruit, in cocktails and in salads! This salad can be served with seafood or just for something different! The original recipe comes from an Australian Womens Weekly cook book with some modifications.

Ingredients
Salad
- 2 Large Mangoes, Chopped Coarsely
- 1 Medium Red Onion, Sliced Thinly
- 4 Fresh Long Red Chillies, Thinly Sliced
- 2 cups Bean Sprouts
- 3/4 cup Fresh Coriander, Chopped Coarsely
Salad Dressing
- 2 tablespoons Fish Sauce
- 2 tablespoons Coconut Sugar or Dark Brown Sugar
- 4 tablespoons Fresh Lime Juice
- 2 tablespoons Peanut Oil
Instructions
- Mix all the salad ingredients in a medium bowl.
- Place the fish sauce, sugar, lime juice and peanut oil in a screw-top jar. Shake well to combine.
- Pour over salad and toss gently to combine.
