Pumpkin Puree

Pumpkin can be cooked in so many different ways – this one enhances the natural sweetness of the pumpkin and is a nice change from mashed potatoes!

Ingredients

  • 1 kilogram Peeled Pumpkin, Cut into 4cm Cubes
  • 110 grams Unsalted Butter, Softened
  • 50 milliliters Extra Virgin Olive Oil
  • Salt
  • Freshly Ground Black Pepper

Instructions

  1. Steam pumpkin for 20-30 minutes until very tender.
  2. Puree using a stick blender with butter and oil until smooth.
  3. Season with salt and freshly ground black pepper to taste.
  4. Serve immediately.
