I love this chicken salad! I made it as a result of having leftovers in the fridge – it tasted so good I make it every summer when the fruits are in season. It is quick and easy too!

- You can replace the mango with half a papaya.

Ingredients
Salad
- 1 Whole Roasted Chicken, Skin Removed, Boned & Chicken Cut into Pieces
- 1 Carrot, Cut into Matchsticks
- 1 Red Capsicum, Quartered & Sliced
- 1 Cucumber, Seeded and Sliced
- 1 Avocado, Cut into Chunks
- 1/2 Mango Cheek, Cubed
Salad Dressing
- 3 Passion Fruits, Flesh Scooped Out
- Dash Sweet Chilli Sauce
- 2 tablespoons Fresh Lemon Juice
- Dash Olive Oil
Instructions
- Mix all the salad ingredients in a bowl.
- Put the salad dressing ingredients in a screw top jar and shake well.
- Pour the salad dressing over the salad and toss to combine.
- Serve immediately or cover and refrigerate until ready to serve.
