The original recipe was taken from an Australian Women’s Weekly cook book. This is a great recipe to serve at Christmas but is equally great to serve as a light entree at any time. It is quick and easy to prepare and tastes refreshing and light!

- You can make as much or as little of this entree as you like by adjusting the chicken and witlof.

Ingredients
- 200 grams Piece of Smoked Chicken
- 1 White or Red Witlof
- Cranberry Sauce
Instructions
- Separate the witlof leaves and lay them out on a serving dish.
- Cut the smoked chicken into slices to fit the witlof leaves.
- Place a piece of chicken on each witlof leave and top with a dash of cranberry sauce.
- Serve immediately.
