This recipe was provided by a friend. These are definitely great to make as a gift and also when you want something sweet but do not have time to bake a cake! It is worth keeping the ingredients to hand in the pantry so you can whip them up at a moments notice!

Ingredients
- 250 grams Packet of Marie Biscuits or Digestives or Any Plain Sweet Biscuits
- 1 cup Dessicated Coconut
- 400 grams Tin of Sweetened Condensed Milk
- 2 tablespoons Cocoa Powder
- Baileys Irish Cream - Lots!!!
Instructions
- Process the biscuits in a food processor to form crumbs. (Alternatively, place in a Glad Bag or Freezer bag and bash with a rolling pin on a hard surface until you have crumbs!)
- Add ½ cup of dessicated coconut and the 2 tablespoons of cocoa powder.
- Mix well with a wooden spoon.
- Add condensed milk. (Dependent on the amount of Baileys you want to add you need to reduce the amount of condensed milk as you don’t want the mixture to be too runny).
- Add Baileys – relative to the condensed milk!
- Stir and mix well.
- Place the remainder of the dessicated coconut in a bowl.
- Using your hands pick up one teaspoon of mixture and roll into a ball. If it is a bit too dry, add in a little extra condensed milk to the mixture and start again.
- Roll the ball in dessicated coconut until covered all over.
- Place balls on a tray and repeat until all balls have been completed. Place tray in the fridge to allow balls to set.
