The original recipe came from a book called India’s 500 Best Recipes by Hussain, Fernandez, Baljekar & Kanani. It has been modified slightly. This is a very simple, easy to make custard dish that tastes great!

Ingredients
- 8 Eggs
- 150 grams Soft Brown Sugar
- 500 milliliters Coconut Milk
- 2 teaspoons Vanilla Extract
- Icing Sugar to Decorate
- Sliced Fresh Fruit to Serve
Instructions
- Preheat oven to 150 degrees Celsius.
- Whisk the eggs and sugar in a bowl for 5 minutes.
- Add the coconut milk and vanilla extract and whisk well.
- Pour the mixture into 8 individual heatproof glasses or ramekins.
- Stand the heatproof glasses or ramekins in a roasting pan.
- Fill the pan with hot water to reach halfway up the sides of the dishes.
- Bake for 30 minutes or until the custards are set. Test with a cocktail stick or tooth pick.
- Remove from oven and allow the dishes to cool.
- Dust with icing sugar and serve with sliced fruit such as mango or papaya.
