This trifle does taste amazing but care should be taken when eating it – it does contain a lot of alcohol!
Hints & Tips
- The Vodka Cherries are made from a separate recipe in this blog.
- You can replace Sherry with Dessert Wine, Chocolate Liqueur, Baileys Irish Cream, Kahlua or Any Liqueur of your choice as long as they compliment the jelly and fruit!
- You can replace Strawberry Jelly and Strawberries with Raspberry Jelly and Raspberries. If I was to replace with Orange Jelly and Oranges I would be using Cointreau as the liqueur!
- You can make your own custard and whip your own cream. I chose to use shop bought as it is quicker!

Ingredients
- 1 Portion of Vodka Cherries
- Sponge Fingers
- Sherry
- 1 Pkt Strawberry Jelly Crystals (to make 500ml of jelly)
- 250 milliliters Boiling Hot Water
- 250 milliliters Vodka
- 500 milliliters Double Thick Custard
- 330 milliliters Tub of Whipped Cream
- Strawberries
Instructions
- Line the base of a trifle dish with Vodka Cherries (drained of Vodka). You can use as many or as little as you like.
- Pour some sherry into a shallow bowl. Soak the Sponge Fingers in the sherry and place the sherry soaked sponge fingers on top of the vodka soaked cherries to cover the base of the dish.
- The packets of Jelly Crystals I have used, require you to mix the Jelly Crystals in a heat proof jug with 250ml of Hot Water and stir with a fork until the jelly crystals have dissolved.
- The next step is to usually top this up with 200 - 250ml of cold water. Top up the jelly but REPLACE quantity of cold water with the equivalent quantity of Vodka. Mix well.
- Pour jelly over the vodka cherries and sponge fingers and place in fridge to set overnight.
- Just before serving, pour the double thick custard over the set jelly. Spread the whipped cream over the custard and top with sliced strawberries.
