I have had this dish often at Spanish tapas restaurants and often wondered how to make it. I am not sure where I originally found this recipe but it is amazingly simple to do and tastes amazing!
Hints & Tips
- I have made the first part of the recipe the night before and then the last part when the guests have arrived so I serve it hot!
- I have used 1 chorizo sausage but you can use extra, just increase the other ingredients.
- GF (if using wheat free bread), DF, SF

Ingredients
- 1 Whole Chorizo Sausage
- Red Wine
- 4 Cloves Garlic
- Crusty Bread
- 2 Bay Leaves
Instructions
- Place the chorizo sausage into a sauce pan with the garlic and bay leaves. Cover with red wine - making sure it is at least 2 cm above the sausage.
- Bring to the boil and simmer for 45 minutes.
- You can choose to take the next step or allow the chorizo to cool in the red wine and perform this next step before serving the dish.
- Remove the chorizo from the red wine and the bay leaves. Chop chorizo sausage into 1 cm slices. Place the chopped chorizo back into the red wine. Bring to a boil and simmer gently until the red wine has reduced to a sauce.
- Serve hot with crusty bread to soak up the sauce.
