This recipe came about because we had some leftover Sicillian Caponata and was getting bored with pan fried rockling! It is a great example of creating a main dish from a leftover!
Hints & Tips
- I have tried this with Rockling but any white, firm fish that is not naturally strongly flavoured will work well.
- You can adjust the quantities accordingly. Add an extra tin of tomato into the caponata to make a less thicker sauce and use more fish pieces. If you are using leftover caponata then this is something you are likely to need to do to make it go further.
- You can cook the fish in advance and allow to cool. You can cook the Sicillian Caponata in advance and cool. Place the fish in the caponata and then just heat thoroughly before serving!

Ingredients
- 1 Portion of Sicillian Caponata
- Olive Oil
- 8 Pieces of Rockling
Instructions
- Heat the olive oil in a frying pan.
- Pan fry the pieces of rockling until cooked through.
- Heat the Sicillian Caponato in a deep sauce pan. If the caponata is thick, add an extra tin of chopped tomato in juice to create a less chunkier sauce.
- Add the cooked pieces of rockling, ensuring each is well covered by the sauce and heat through for 10 minutes.
- Serve rockling with the caponata as a main dish.
