This recipe comes from a Spanish cookbook called 500 Tapas by Maria Segura with some slight modifications. What is there not to love about asparagus? It is quick and easy to prepare and tastes amazing when added to a few extra ingredients!

Ingredients
- 100 grams Baby Spinach Leaves
- Salt
- Freshly Ground Black Pepper
- 2 Bunches of Asparagus
- 2 tablespoons Olive Oil
- 8 Cloves Garlic, Chopped
- 4 tablespoons Toasted Pine Nuts
Instructions
- Bring a pot of salted water to the boil. Plunge in the asparagus for 2 minutes.
- Drain and place the asparagus in ice cold water.
- Heat the oil in a frying pan.
- Add the garlic and fry until golden.
- Add the chilli flakes and saute for 1 minute. Add the pine nuts.
- Add the spinach and saute until just wilted.
- Add the asparagus and fry for another minute and then season with salt and pepper.
- Serve immediately.
