There are so many ways to bake cheese, this is simple, easy and tastes amazing too! Make sure you have some sliced crusty bread on hand to mop up the melted cheese that will ooze out as you cut into it!
Hints & Tips
- If you do not have Brie, use Camembert Cheese, it will work just as well.
- You can use a different jam but not something too sweet, try cherry or raspberry.
- I have used a whole piece of cheese in this recipe. If you want individual serves, I suggest using more pastry and cutting the cheese into smaller pieces, wrapping each piece completely with a piece of pastry. I would recommend reducing the cooking time for smaller pieces to 15 minutes.
- I have baked the cheese without using the pastry. With this method you can vary the amount of cheese you use. You place the cheese in a baking dish, ideally with a lid and bake with the lid on or covered tightly with foil. If you use this method, you cannot slice the cheese but you can serve it immediately as a fondue to share, with everyone dipping in crusty bread.
- If you want an alternative flavour, replace the figs and almonds with chunks of garlic cloves stuck into the cheese.

Ingredients
- 500 grams Round of Brie Cheese or Half a Round of Brie
- 1/2 cup Fig Jam
- 1 Sheet Puff Pastry
- 1/3 cup Toasted, Silvered or Flaked Almonds
- Crusty Bread Cut into Pieces
Instructions
- Preheat oven to 190 degrees Celsius.
- Place the puff pastry sheet on a baking tray lined with baking paper.
- Place the cheese in the centre of the pastry sheet.
- Spread the jam on top of the cheese.
- Top with the silvered or flaked almonds.
- Fold the corners of the pastry into the centre to completely cover the cheese, starting from one corner and overlapping so the cheese is sealed.
- Bake for 25 minutes.
- Allow to cool for a short while and then slice and serve with crusty bread - it will be needed to mop up the melted cheese as it oozes out when you cut into it!
