I created this recipe many years ago when short on time. The best thing about this recipe is that you can prepare in advance and then reheat in the oven on the day of serving, or you can make them up, freeze them, defrost when you need them and reheat in the oven!
Hints & Tips
- I have chosen to add cheese, chives and spring onion. However, add whatever you like. I sometimes add chopped fried bacon pieces or mushrooms. Use your imagination!
- You can use any good melting cheese that you like. I often use grated Manchego Cheese as it is sheeps milk, not cows milk. You can also mix cheddar cheese with some grated parmesan.
- You can use milk or cream- depending on how rich you want this to be. You can also add some minced garlic too!

Ingredients
- 8 Large Baking Potatoes
- Salt
- Butter
- 1 Bunch Spring Onion, Finely Chopped
- 1 Bunch Fresh Chives, Finely Chopped
- Dash Fresh Milk
- 200 grams Grated Cheese
- Olive Oil
- Plain Flour for Dusting
- Pepper
Instructions
- Preheat oven to 210 degrees Celsius.
- Wash and dry potatoes. Prick all over with a fork.
- Rub a little bit of olive oil all over each potato and add a bit of flour.
- Bake in hot oven for 45 - 60 mins. To check if cooked, prick with a fork, it should go through easily. If not cooked, cook in 10 minute increments until cooked.
- Allow to cool slightly but not completely.
- Using heat resistant gloves, take each potato and slice open a lid on the top. Carefully scoop out the cooked potato, being careful not to break the shell.
- Add milk, cheese and as much butter as you like to the potato and mash until smooth.
- Add salt, pepper, spring onion and chives and mix well.
- Carefully spoon the mixture back into each potato shell. It is OK over-fill slightly.
- Wrap each potato in baking foil.
- At this point, potatoes can be frozen and defrosted at a later date or set aside in the fridge until ready to use.
- When ready to eat, preheat oven to 180 degrees Celsius.
- Bake potatoes in oven for 30 minutes until heated through.
