This has to be one of the simplest entrees you will ever have to prepare – it is very quick and simple but tastes divine! It works well as a side dish too – you may need to increase the quantity when making as a side dish, depending on the number of guests!

Ingredients
- 3 Balls of Buffalo Mozzarella
- 3 Large Tomatoes - Choose Vine Ripened or Organic Tomatoes with Real Flavour
- Bunch of Fresh Basil
- Good Quality Extra Virgin Olive Oil
- Freshly Ground Black Pepper
- Sea Salt
Instructions
- Drain and slice the buffalo mozzarella.
- Wash, dry and slice the tomatoes. You will need the same number of slices of tomato as there are slices of buffalo mozzarella.
- On a serving dish, place a slice of buffalo mozzarella, top with a slice of tomato and a whole basil leaf. Overlap a slice of buffalo mozzarella and repeat with placement of tomato and basil until you have used all slices.
- Drizzle with olive oil and sprinkle with salt and pepper.
