This recipe comes from a Spanish cookbook called 500 Tapas by Maria Segura which has been modified slightly. I love mushrooms and especially when prepared like this!
Hints & Tips
- For simplicity, I have used one variety of mushroom in this recipe. However, you can use the same quantity of mixed mushroom varieties.
- You can double the quantity if you want more mushrooms.

Ingredients
- 2 tablespoons Olive Oil
- 10 Cloves of Garlic, Thinly Sliced
- 500 grams Fresh White Mushrooms, Cleaned & Sliced
- Rind and Juice of 1/2 Lemon
- 150 milliliters Sherry
- 4 tablespoons Chopped Fresh Flat Leaf Parsley
- Pinch Salt
- Freshly Ground Black Pepper
Instructions
- Heat the olive oil in a frying pan over medium heat until hot.
- Add the garlic and saute until it turns golden brown.
- Add the mushrooms and cook, stirring vigorously, until golden brown.
- Add the lemon juice and rind and mix.
- Add the sherry, bring to the boil and continue to cook for 1 minute.
- Stir in the parsley and season with salt and pepper.
