Parsnip puree is a great side dish to many slow cooked dishes! This recipe is a modified version of a Gordon Ramsay recipe I once found.
Hints & Tips
- You can serve parsnip puree as a side dish on its own or place a spoonful on a plate and place a lamb shank or other serving of slow cooked meat directly on the puree.

Ingredients
- 8 Large Parsnips
- 200 grams Butter
- 200 milliliters Double Cream
- Sea Salt
- Freshly Ground Black Pepper
Instructions
- Peel and chop the parsnip and steam in a microwave to soften slightly.
- Melt the butter in a frying pan over low heat and cook the parsnip until completely soft and falling apart.
- Add the cream and bring to the boil. Season with salt and pepper.
- Liquidize to a smooth puree. Keep warm or serve immediately.
