I found this recipe in a book called Small Foods by Murdoch Books. It is very easy to make and tastes amazing, especially with the modifications I have made to the recipe.
Hints & Tips
- You can use pre-marinated, uncooked garlic prawns and omit the garlic.
- A French Baguette works well if you do not have crusty bread. If using crusty bread, slice and cut into small serving sizes.
- This recipe will keep for a few days in the fridge.

Ingredients
- 2 tablespoons Olive Oil
- 500 grams Raw Prawns, Peeled & Deveined
- Crusty Bread
- Salt & Pepper to Taste
- Tabasco Sauce to Taste
- 1/4 Bunch Fresh Coriander, Chopped
- 2 tablespoons Wasabi Mayonnaise
- 1 tablespoon Fresh Lime Juice
- 6 Thin Red Chillis, Finely Chopped
- 10 Cloves Garlic, Crushed
- 1 tablespoon Finely Grated Lime Zest
Instructions
- Heat the olive oil in a frying pan.
- Add the garlic and chilli and cook for 1-2 minutes.
- Add in the prawns and cook until prawns and cooked. Do not overcook.
- Allow the prawns to cool.
- Drain any liquid from the prawns and place in a a food processor with the lime zest and lime juice.
- Process until roughly chopped.
- Stir through the mayonnaise and coriander. Season with tabasco sauce, salt and pepper.
- Chill for at least 1 hour or until firm.
- Serve at room temperature with crusty bread!
