Couscous is a great alternative side dish if you do not want to serve rice or potato. This version is a vegetarian version but you can make it into anything that you want!

- Couscous is versatile as it takes on the flavours you add to it.
- Pre-roast the vegetables in advance to save time.
- When I have needed to serve as a Vegan main course dish, I have often roasted a selection of complimentary roasted vegetables (red onion, capsicum, eggplant, zucchini, mushrooms) and mixed them with the couscous and served it as a Vegan main dish.
- You can replace vegetable stock with chicken stock, beef stock or any combination thereof, depending on what you want to add to it.
- You can replace vegetables with other cooked vegetable variations or cooked meats, it is entirely up to you. Caramelised onion and stir fried chicken works well, roasted pumpkin and sweet potato is great. You can make it sweeter by adding toasted silvered almonds, craisins and shredded boiled chicken – just use your imagination!

Ingredients
Roast Vegetables
- 1 Capsicum, Cut into Squares
- 1 Small Zucchini, Sliced Thickly
- 1/2 Small Eggplant, Cut into Cubes
- Olive Oil
- Salt
- Pepper
- Italian Mixed Spice
Couscous
- 1 tablespoon Olive Oil
- 1 Brown Onion, Diced
- 300 Couscous
- 375 milliliters Boiling Vegetable Stock
- 2 tablespoons Olive Oil, Extra
Instructions
- Preheat oven to 185 degrees Celsius. Line a baking dish with baking paper.
- Toss the capsicum, eggplant and zucchini together with drizzled olive oil, salt, pepper and, if desired, some italian mixed spice. Place in lined baking dish and bake for 45 minutes.
- Heat the olive oil in a frying pan. Cook the onion until golden brown.
- Combine couscous with the stock and extra olive oil in a large heatproof bowl. Cover and stand for about 5 minutes until stock is absorbed, fluffing with a fork occasionally.
- Stir in the onion and roast vegetables and serve.
