I have to admit, I am not an expert at creating Vegan dishes that taste fabulous and it is certainly an area where I am still learning! I came across this recipe on the internet and in my desire to make it as tasty as possible, modified it. The result was a lasagne which both my Vegan and non-Vegan friends absolutely loved!
Hints & Tips
- The picture of the whole dish was taken before it was cooked in the oven. If you were creating this for Vegans and non-Vegans, you could sprinkle half the dish with grated cheese!
- Check the ingredients of the Oven Ready Lasagne Sheets – they should not contain any eggs. I used San Remo Wholemeal Instant Lasagne Sheets which are dairy and free.
- Do not use Silken Tofu, it is too soft. Use a firm tofu which you can easily crumble.
- The spinach can take a while to defrost – take this into consideration.
- The lasagne sauce can be made in advance and the lasagne assembled ready to bake when you are ready.

Ingredients
Lasagne Sauce
- 2 tablespoons Olive Oil
- 2 Large Brown Onions, Finely Diced
- 10 Garlic Cloves, Thinly Sliced or Minced
- 4 x 425g Tins of Rich & Thick Tomato Pieces with Garlic & Herbs
- 140 grams Tin Tomato Paste
- 1/2 cup Fresh Basil, Chopped
- 1/2 cup Fresh Parsley, Chopped
- 1 teaspoon Salt
- 1 teaspoon Pepper
Lasagne
- 750 grams Packet Firm Tofu
- 3 tablespoons Minced Garlic
- 1/2 cup Fresh Basil, Chopped
- 1/2 cup Fresh Parsley, Chopped
- 2 teaspoons Salt
- 3 teaspoons Pepper
- 750 grams Pack Frozen Spinach - Thawed, Drained of Excess Water
- 250 grams Oven Ready, No-Cook Lasagne Sheets
Instructions
Tomato Sauce
- Heat olive oil in a large pan. Cook the onions until golden brown.
- Add the garlic and cook for 5 minutes.
- Add the tins of tomato, tomato paste, basil and parsley. Bring to a boil and then simmer on a low heat for 1 hour.
- Add salt and pepper. Set aside until ready to use.
Prepare & Cook the Lasagne
- Crumble the tofu in a large bowl.
- Add the garlic, basil, parsley, salt and pepper and mix well.
- Preheat oven to 200 degrees Celsius.
- Using a 9inch by 13inch lasagne dish, assemble the lasagne.
- Spread 1 cup of the tomato sauce on the base of the dish.
- Place a single layer of lasagne on top.
- Sprinkle 1/3 of the tofu mixture over the lasagne.
- Sprinkle all of the spinach over the tofu.
- Spread 1.5 cups of the tomato sauce over the spinach.
- Place a layer of lasagne on top of the tomato sauce.
- Sprinkle 1/3 of the tofu mixture over the lasagne.
- Spread 1.5 cups of the tomato sauce over the tofu mixture.
- Place a layer of lasagne on top of the tomato sauce.
- Sprinkle remaining 1/3 of the tofu mixture over the lasagne.
- Spread the rest of the tomato sauce over the tofu mixture.
- Cover the whole dish tightly with foil.
- Bake in the oven for 30 minutes.
