My blog would not be complete without a tribute to the Anzacs who have made living in Australia possible for all of us. This recipe for Anzac biscuits is an original recipe from the Country Womens Association and is true to the original recipe, using white sugar not brown. I hope you enjoy these on Anzac Day and at any time of year!

Ingredients
- 1 cup Plain Flour
- 3/4 cup White Sugar (I used Caster Sugar)
- 1 cup Rolled Oats
- 125 grams Butter
- 2 tablespoons Golden Syrup
- 2 teaspoons Bicarbonate of Soda
- 1 teaspoon Boiling Water
Instructions
- Preheat oven to 100 degrees Celsius.
- Mix flour, oats and sugar in a bowl.
- Melt butter and golden syrup.
- Mix bicarbonate of soda and water to a paste and add to the butter mixture, stirring well.
- Add butter mixture to the dry ingredients and mix until combined.
- Place spoonfuls of mixture on a baking tray lined with baking paper - leave room between each biscuit to allow them to expand. Will make approximately 25 - 30 biscuits, depending on the size.
- Bake for 20 minutes.
- Cool completely before storing in an airtight container.
